Tips : When you brew Chinese white tea in a gaiwan, always leave a little bit of tea in the gaiwan between each infusion. This is call “the root” and will allow you to get the best of the green tea.
Brewing Instructions: Loose-leaf teas are best brewed using a teapot and strainer or stainless steel mesh tea ball. If using a tea ball allow room for tea leaf expansion by using one at least 2 inches in diameter for one 8 oz. cup. Use 2 tsp. of tea to brew one 8 oz. cup. Bring water to boil, remove from heat for 2-3 minutes. Water should be at 165-175 degrees. Brewing white teas at temperatures slightly less than boiling brings out the subtleties and sweetness. Brew for 2-3 minutes. This tea can be used for 3-4 infusions. Our teas have a natural sweetness and do not usually require sweeteners.

This tea is from the home of white teas, Fujian's Fu Ding county. Bai Hao Yin Zhen is hand-plucked in the first two weeks of March and made using century old techniques. The flavor of this tea is light, sweet and pleasing with velvety, smooth liquor that is the characteristic of a silver needle white tea. White tipped Silver Needle is one of the highest quality white teas, and is picked during the spring before the buds open to preserve its tenderness. Exquisite and delicate, the tea produces a very pale yellow brew and has a fresh, sweet fragrance with traces of citrus. This tea has high concentrations of polyphenols (antioxidants that help fight against cancer-causing radicals and heart disease). Steep the leaves in a tall glass to get the most out of this tea's great show and taste.
This particular Chinese white tea holds a very graceful form. The leaves are even, strong, straight, and full with fine white hairs. The Bai Hao Yin Zhen is only made with buds, which are harvested from the Fuding Da Bai Hao and the Zheng He Da Bai Hao trees. The liquor holds a light apricot color and the taste is fresh and delicate with a pleasent high fragrance. This tea is a very good daily tea. It is also recommended as an efficacious remedy for the hives.
